Austin broke the news to me the other day; He is ready to give ‘paleo’ a go. I am so proud of him and excited to get back on a more steady paleo way of eating. The last few months of my life have swayed from the form of eating that I most prefer. It is such a challenge to stay strict to a form of nutrition when other options constantly present themselves. However, now we are in this together. A couple days into new excitement and clean eating.
Today was a glorious day in this spring season. Austin and I worked on the yard and for desert I was sure to surprise him with some almond butter bars that fit into our plan of nutrition. Cheers to healthy lifestyles with sweet celebrations here and there!
Almond Butter Bars
1 Cup Coconut Flour
1 tsp Baking Soda
1 Cup Dark, Dark, Dark Chocolate
Handfull of Almonds
1/2 Cup Melted Coconut Oil
1/4 Cup Alfalfa Honey
1/4 Cup Apple Sauce
3/4 Cup Almond Milk
1/2 Cup Almond Butter-I made my own using fresh, raw almonds.
1 tsp Vanilla
Pinch of Salt
Mix wet ingredients. Add dry and mix. Press into an 8×8 inch baking dish that has been greased with coconut oil. Sprinkle coconut flakes on top. Bake at 350 for 25 minutes.
